There is no doubt…they are one of my favorite veggies! Found a new recipe and you cannot go wrong. My twins eat it up too, and they are just as good the 2nd day!

I used bacon instead of pancetta and left out the olive oil. I had enough oil from the bacon that I didn’t need to add the olive oil. So delish!
