I’ve been working on a small shop update…hoping to have the dolls completed by April. Their faces have been painted and now comes the fun part…accessories!
It has taken me awhile (like all new programs and apps do) but I finally know how to work Instagram and Instacollage! sigh…just when I master one thing, something else comes up and I find myself behind yet again.

Always a bit behind…but I am considering on joining the juice craze! haha! Not in a let’s-reduce-calorie-intake-and-replace-with-a-juice kind of way but just to ensure I get all my veggies and fruits in on a daily basis. Although I am quite conscious about giving my kids their share of veggies and fruits, I, myself, am not very good about consuming them. It’s a busy life I live, and I just don’t always have the time to stop and smell the roses…that’s what I compare this to! So I’m contemplating…it’s a big investment and even bigger commitment b/c of our lack of counter/storage space. Here’s my top pick…

Before committing to not only the purchase but getting good use out it, I’ve been using my blender to liquify and I’m happy to say that we’ve been enjoying fresh juice/smoothies on a daily basis for the past 2 weeks. So far, so good. I don’t even mind the clean up and there’s hardly any prep b/c I buy everything prewashed and packaged! The goal is to be efficient and not be turned off by all the washing, cutting, and prepping your veggies and fruits. Now why go and buy a prof blender? b/c of the darn seeds!!! The husband (who is a bit more particular that I am) and I tried to convince ourselves that having the seeds beats the price of spending $400+ on a prof blender but we can no longer lie to ourselves. Those seeds suck, esp pomegranate!!! I’m still not done doing my research so *when* we decide to buy one (b/c I’m sure it’s gonna happen soon), I shall let you know what we decide upon. Until then, I shall continue drinking my kale/spinach/fruit juices WITH seeds and brushing/flossing to get rid of the seeds!

I’ve made this stock several times and I thought I’d share my recipe b/c it never fails. Husband, who is not Korean, says it reminds him of Chicken Long Rice, a Hawaiian dish. In my book, it is the perfect comfort food! and my lil ones eat it up!
INGREDIENTS NEEDED:

I’ve made this stock several times and I thought I’d share my recipe b/c it never fails. Husband, who is not Korean, says it reminds him of Chicken Long Rice, a Hawaiian dish. In my book, it is the perfect comfort food! and my lil ones eat it up!
INGREDIENTS NEEDED:
- 4-5 lb whole chicken (this will serve a family of 4 and you will have plenty of leftovers!)
- 1 whole onion
- 4-5 inch piece of peeled ginger
- 10-15 garlic
- 3 green onion
- 4-5 hours!
HOW TO:
1. Rinse your chicken thoroughly. Throw away the giblets. Trim all the excess visible fat and cut off the bum tip. I also like to remove some of the skin to reduce having to repeatedly skim off the fat later on.
2. You need a pot big enough that when the chicken is placed inside, the chicken is fully submerged with water like so. Now I’ve read on other sites that to reduce the fat/grease, you should boil the chicken once and dump the water. I’ve tried this once but I do feel that you lose some of the flavor this way.
So the choice is yours… retain the full flavor (go to step 3) or get rid of as much fat/grease as possible. If it’s the latter, this is what you will see.
Not a pretty sight, I agree. After it comes to a boil, dump the water, rinse the chicken, clean your pot, and submerge again in water.
3. Place your onions, ginger, garlic, green onions in the pot. This will really flavor your stock! Cover and let it come to a boil for approx 30 minutes. Stay nearby…otherwise you risk having the water boil over and creating a big ol’ mess
Once it comes to a boil, lower your heat to about medium. Cook for another 45 minutes.
4. Remove all your veggies. and at this point, they will fall apart on you. It’s easiest to use a slotted ladle.
what your stock will look like. Yes, it is greasy! I just use a ladle and start skimming away. This step I do quite often b/c I’d like to get it as “clean” as poss.
5. After cooking the chicken for 2.5 hours from the start, remove your chicken. At this point, your chicken will also to start falling apart. I use a pair of tongs and slotted ladle.
your chicken will be SUPER moist and delish!
6. Once your chicken has cooled, you can shred it or cut it into pretty pieces to have later on with your jook (porridge).
7. Clean off the bones and you can add it back to your stock to make it milkier!
after 1.5 more hours of boiling with the bones!
THE POSSIBILITIES ARE ENDLESS!
1. Julienne veggies (onions, squash, potatoes) and make kalgooksoo!
2. Add rice to make jook (porridge). Soak your rice in water for 1 hour. Drain and add to stock. Cover and simmer for 30 minutes.
3. I’ve used orzo which husband loved! and I’m thinking of adding egg noodles next time.

So remember a LONG time ago when I made these?
Well, I had been meaning to make a template and then realized I had no idea how to do so! But with so many inquiries on the template, I did some researching and figured it out…I think
Here is the template:
MATERIALS:
2. Bone Folder
4. Scissors
5. Xacto Knife (optional)
6. Cutting Mat
7. Glue
8. 6 1/2 x 6 1/2 Black Square Envelopes
9. Pindot Red Fabric
(for Minnie Mouse invites)
10. White thread and needle (for Minnie’s bows)
HOW TO:
1. Download the PDF here and print it out on your white 8.5 by 11 cardstock.
2. Cut out the outline of the head. This will be your template.
3. On your cutting mat, take your template and using your bone folder, score it on to your black cardstock. If you use a 12 by 12 size, you will be able to cut out 2 heads per sheet. Cut out the heads with your scissors. I used my Xacto knife to make cleaner cuts where the ears meet the top of the head.
4. After you’ve cut out all the heads, cut out the inner white circle. Create your invitation wording on Word and play around with it until it is to your liking and fits in the circle. This will take some trial and error. Now, how will you know if it fits? My method…I hold up the wording printout and hold my inner white circle over it. The goal is to have all your wording fit within the parameters of the circle.
5. Print out the invitation wording on your 8.5 by 11 white cardstock. Trace or score and then cut out the inner circles.
6. Adhere them to the head. And there’s your Mickey invite!
7. If you would like to create Minnie invites, make bows out of your polka dot fabric and adhere them on the top of the white circle. You can try using glue but I wasn’t sure if they’d stick so I sewed mine by hand.

Baby girl had her V-day party last Friday and I had contemplated making her some sort of treat bag just like the ones I made for big bro and sis (before I learned how to sew!)
Last minute, actually the night before the party, I decided that she needed to have one since the big kids have one!
So WITH my sewing machine, I whipped one up.
This one is much roomier and has a nicer opening…which then got me thinking, should I make new ones for the twins??? sigh…

So glad I went with Purl Soho’s yarn (I also used the same color, Ecru). It is ultra soft…no itch to it and keeps me SO warm. The only downside? When blocking it, I immersed it in water and it smelled so horrible! haha! My family is all very sensitive to smells so you can imagine everyone’s reactions when I forced them to take a whiff (I needed to know if it was just me…just my husband…just my son…and sure enough daughter confirmed it, it smells when wet!) Now how to describe the smell…I’ve never smelled an alpaca before but I imagine this is what the animal would smell like. Fortunately, for everyone, the smell goes away when the yarn dries. Phew! We are all a bit sensitive to yarn smells right now b/c husband gifted me a cardigan sweater and no matter what I do, I cannot get rid of the smell. I have dry cleaned it! aired it out for weeks and nada! I don’t mind it so much
b/c I love the sweater. But everytime I wear it and we are driving somewhere, I hear my son (who sits all the way in the back of the car!) breathing through his mouth. And as soon as I stop the car, he demands that his door be opened first.
Love how it drapes too! Think I caught the knitting bug! I’m itching (haha! no pun intended) to make something else.

My twins have been taking art class for the past 2 months and I cannot tell you how happy I am that they have shown such a great interest in art. Each month, the art teacher focuses on a different theme and medium. It took me almost a year to find her and I am SO pleased with the class and what it has done for my kids. Finding an extracurricular activity where you feel like you and/or your kids really get something out of it is sometimes difficult, especially when you have certain expectations. So when I find something that truly surpasses my expectations, it means a whole lot to me
